Recipe -Easy Lentil and vegetable stew – Plant Protein


hi everyone i’m Shelley of Lacunae Glow
and i thought i’d show you a really easy and healthy recipe
it’s plant protein and it’s an easy vegetable and lentil stew you just
make it from whatever you’ve got in your fridge and cupboard so i’m making it from
things that I’ve had in my freezer and the garden and some vegetables frozen
and fresh so something to do and cook yourself something healthy
full of nutrition so lentils are full of minerals and vitamins and protein as
well so I get into it at the moment I’m justif frying an onion
here so I’m just frying it in a bit of olive oil and going to put some garlic in as well and yes so this is actually some
grated zucchini or courgette wherever you are in the world so I grew this in
the garden but you basically just add what you’ve got in the cupboard so
we’re gonna chuck that in in this vegetables there’s some frozen beans
some corn some carrot a stalk of celery that I cut up as welll and there was
the little capsicum that I found growing in the garden as well but basically
just chuck in whatever that you like and that you’ve got and thats handy I used to live off of this when I was
traveling, travelled with my sister in a beat up Datsun 180B and we took it up the east coast of
Australia and there’s little vegetable stalls that you see on the side of the
road so we used to just stop and grab some vegetables and then we would cook up
some lentil stew we could share it and it’s good nutrition so usually
yeah the staple is like onion and maybe some garlic if you’ve got it, can of tomatoes and some lentils and then you just chuck in whatever else that you’ve
got to put into the stew so today I’m actually using fresh tomatoes
because I had a whole heap of tomatoes in the garden that need to be used but yeah just use a can of tomatoes, a can of tomatoes is really good for you too so try and get organic where you can if
possible so that was a whole lot of tomatoes and then usually I’ll put herbs in as
well so you can just do mixed herbs or like dried coriander whatever you like I
had herbs in the garden as well so this is some parsley and some oregano and thyme but
yeah just use whatever that you want so we’re gonna throw that in so this
is actually like oh my god I love lentils look at all that goodness so this is
actually a mixture of lentils red ones and French lentils green lentils there’s
even some split peas in there as well but you can use whatever you’ve got in
the cupboard all of them are good for you so yeah we’re gonna throw that in and
I’m just gonna stir the stew goodness YUM I still might put in a can of
tomatoes I’ll see how I feel so now I’m going to put in the lentils that is so
good for you you can have it with toast with baked potato mash potato rice whatever you want really or you
can just have it on its own just it’s so nice on its own as well I also
had some sun-dried tomatoes in the fridge so and there was a chili in the
garden so I’m gonna chalk that in but yeah you don’t have to chuck that in and
that’s pretty much it so we’re gonna chuck in some water so you just cover it
remember that the lentils are going to expand so you want to keep an eye on it
so it doesn’t burn and if you need to add more water but basically I just add the
water over the top of the stew so I’ll show you I’ve got about a jug there yeah I’m gonna get another jug… ta dah …about 2 jugs of water cover the vegetable add in a cube of vegetable stock and you just add more
vegetable stock to your taste you can add salt and pepper as well and we’ll
let it simmer and keep an eye on if you need to add more water just add a bit
more water and we’ll come back and see it as its cooked it’s so easy so healthy so good for you and
yeah enjoy I’ll be back when it’s cooked and one more trick this is one that my
friend taught me so when you’ve got your spoon all you do to make a spoon rest is
you get a plate and then you put the plate next to where you’re cooking and
you put the spoon on it and so you’ve got it easy spoon rest there you
go okay so I decided that I was gonna put
in some tomatoes canned as well so it was a bit more tomatoey we throw that in
as well…. PLOP 🙂 okay we now have lentil and vegetable stew so that just gives you
an idea of the consistency and I’m gonna have it with mashed potato but ya have
it with what you like and that is very healthy full of nutrition and good for you
